WHY I LOVE MY VITA-MIX AND MY EXCALIBUR DEHYDRATOR
My Vita-Mix BFF
My Vita-mix has become a faithful friend. A friend that never fails me and never quits on me. A friend who is in the thick of things and in the thin of things. In frozen times and in the heat of times. OK, I'm being dramatic again, but seriously, this is worth all the drama.
There are times when I use frozen bananas and frozen greens to make my smoothies. Frozen or not, my Vita-Mix blends it to perfection. I've made green smoothie slushies on hot summer days and I've even made green smoothie warm drinks on chilly winter days. Sounds a little strange I know, but it's actually pretty good.
I've made creamy hot soup, hot cocoa and I've blended recipes galore. I use it for raw foods and I use it for cooked foods. I can turn it up and I can turn it down. I've use it practically every single day.
They say there's a New Vita-Mix Blender in town. I can't imagine how they could improve on the one I have. I still have my 7 year warranty in place, never used it, but I have it. Perhaps the new one is prettier, younger. I also hear the lids come off easier. Doesn't bother me, I have a Vita-Mix 5000 and I'm not ashamed to say, I'm never giving it up.

Raw Sprouted Hazelnut/Date Bars
My Excalibur dehydrator and I have a different relationship. It can take me or leave me. I however, cannot live without it. It's there when I need it. From a gentle air drying to keep my herbs nutritional value intact, to raw nuts, raw pizza crust, raw walnut bars and treats of all kinds, to the heavy heat needed for turkey jerky.
There are times when my dehydrator is going day after day after day, and there are times when I don't even come near it for a couple of weeks. It doesn't get sad or mad at me or cop an attitude. It just does it's thing. I plug it in, set the timer, the temperature, turn it on and walk away. When I come back to it, I'm never disappointed. There's always a sense of satisfaction and all's well in my little part of the world!
Easy nut bar recipe:
(I will always advocate soaking/sprouting and dehydrating nuts for health benefits.)
1 lbs dehydrated nuts (Your favorite)
2/3 lb dates
That's its. Use a food processor to keep a bit chunky and process. Use the Excalibur dehydrator for best results and spread on non stick sheets. Score into bars. You can start out dehydrating at a high temperature (145f) for no more than 1 hour to keep raw. If you soak/sprout the nuts and do not dehydrate first, go ahead and leave at the high temp for no more than 2 hours. Remove your bars and flip over unto the trying tray without the non stick sheets. Turn down and dehydrate at 105f to 110f. Dehydrate of 10 to 12 hours. These are fantastic and compete with the store bought raw bars. Guarantee you will love them. If not, bring to my house!
