I've had broccoli, arugula, peas, adzuki, and lentils all growing at the same time. I found myself with a bit too much and not knowing what to do with them. When they all can grow in a week and I could harvest them all at the same time, what was I to do?

~Dehydrate and make a nutritional powder. Easy to add to smoothies. Dehydrate at 95f or below.
~You could also just keep them growing and pull off or snip what you want for your meal. Take them off of bright lights and they will grow a bit slower. Don't forget to keep them watered slightly or they will dry out.
~Freeze them. Yup, you heard me right. I decided to freeze my micro greens in pineapple juice in ice cube trays. When I want to make a smoothie, just pop them out and they are ready to go.
Freeze your bananas too. If you cut and freeze your bananas into squares, mix with your pineapple cubes, add a little bit of your favorite juice, you will have one healthy fruit slushie that kids will love. That includes big kids like you! On a hot summer day, what could be better?
As a matter of fact, freezing all of your greens is an excellent resourceful way not to waste anything. When you harvest your indoor or outdoor garden or come home loaded with lots of produce from your local farmer's market, DO NOT LET IT GO TO WASTE! SAVE MONEY and make small packets of mixed produce, enough for 1 smoothie and freeze in portion sizes. I like to freeze produce in wax paper. Roll it up and put in plastic bag. Never a waste and always available.
You can always use a vacuum pak appliance like the Food Saver for freezing too. There are many available on the market that are excellent for individual freezing. Individual freezing is important to make sure you always have fresh greens available. That way, you can utilize sales and the farmer's market without having to worry about waste.
